Adam Palubiski and Stephanie Dunn Proprietors of Beat the Wheat met in Culinary School where they developed their passion for food. From there they travelled to Whistler B.C where they began their professional careers in the kitchen. There Adam worked as a pasta chef at one of the top rated restaurants in Canada. These skills were key when developing the recipe for a gluten-free pasta with the authentic texture and flavours usually found in restaurant quality pasta.

In 2008, they moved to Bracebridge, Ontario, "The Heart of Muskoka". Adam continued to work in the culinary industry and often held cooking workshops; one being how to make fresh gluten-free pasta. After the workshop, the feedback from the attendees was, "where can we buy this pasta?" and that was the beginning of Beat the Wheat.

?Since then, the team has been crafting gluten-free pasta the traditional way while using only the best quality ingredients. Beat the Wheat is produced using an Italian pasta machine that kneads and produces noodles with the same texture as traditional pasta. No need for clumpy, hard to make gluten-free pasta.  Beat the Wheat promises a quality pasta that is easy to use and cooks in the fraction of the time as dried.
